Believe it or not, even though I have been eating vegetarian and vegan for almost 20 years, I am still learning about, and incorporating, new foods periodically. Quinoa is a food that I began eating a couple of years ago. I first ate it in prepared salads. It was okay; no big deal because it really didn’t have a taste, I think because it was always cold.
Recently, I bought a bag of uncooked quinoa. Today, I finally cooked it. It was quick and simple to make, according to package directions. After it was done, while still very warm, I spooned some over baby green spinach, arugula, put in some chopped white onions, topped it with some Braggs Liquid Aminos and Nutritional Yeast Seasoning, and drizzled some sunflower oil, mixed it all together; the mixture was very warm. The taste was incredible, and actually made me feel good, relaxed, warm, and satiated. Now, I actually consider it “Soul Food.”
